Butternut Squash reciepe: sunshine roots soup

I thought I had posted this but... I guess not. All the roots vegetables are pretty shades of yellow and orange, hence the name sunshine roots soup

Sunshine Root Soup II:
30 mins- 1hr
Makes enough for 6+ large bowls. Served with stemmed broccoli and corn bread
INGREDIENTS

1/2 stick of butter
1 large onion diced
1 entire garlic head diced
1 teaspoon of allspice
1 teaspoon of cumin
1 teaspoon of cinnamon
1 dash of cayenne pepper
(a dash of adobe)
1 piece of fresh ginger diced (size of your thumb)
1 1/2 cup of water or broth
2 large carrots
1 medium sweet potato
1 1/2 small pumpkin
1 1/2 of butternut squash

DIRECTIONS




Saute the aromatic vegetables(chopped onions, garlic and ginger) first with the stick of butter. Once translucent add the spices, stir cook for about 1 min. Next add all the remaining root vegetables and a cup of water. The water should barely cover the top of the vegetables.

Once the sweet potato and carrots are soft you can serve. Or You can blend the entire soup.  Somefolks don't like the feel of smooth foods. So serve according to your gusto.
