Quarantined Adventures I: Squash Casserole

After the initial buzz over zucchini and squash... you are left with more than you can sauté with garlic butter or add to a simple stir fry. So, then you call up your sis from V.A. and make Squash casserole. It' pairs nicely with a soup for a hearty lunch.
