Callaloo

So, i lost my garden key and wasn't able to check on my box for a week. When I returned... I saw callaloo springing up. My immiedate thought was who sprinkled callaloo seeds in my beds.

However, callaloo grows as a weed in many community gardens in NYC. Which is why, I just took the time to weed my bed out. One average each callaloo plant  was about 8 inches high in one week.

So I harvested all those greens for dinner. I had planned to take a picture... but... I got really hungry once all my food was ready.

Here is a pretty good video on how to prepare callaloo, its really easy. It cooks similar to spinach. The hardest part is sourcing callaloo.  Notice what the complete meal is at the end.  How's that for portion control?
