Quarantined Foodie Adventures VII: Muy loco bizcocho de coco: Coconut Cake

For my sister's birthday, she asked for a coconut cake. I have no idea what influenced this. While, I've had cakes with coconut flakes as topping such as a lemon cake that a mother from my temple used to make for our bake sales. It was so moist. That was years ago.
 I missed bake sales. Delicious, light homemade cakes and pies. Lengardy peach cobblers, pound cakes that inspired customize weddings cakes. My temple hasn't had a bake sale in almost two years!

 In any case, since I had the time I decided to make a coconut cake from scratch. 
I don't know if it's because I didn't sift my flour, but the cake was moist but dense. Maybe I should have added more butter. After, I iced one cake, I remembered that we are not big on sweets. So I left the cake in the loaf pan as is. We ate that cake, as a breakfast cake.
