Veggie- Able: Okra and Tomato

Everyone knows how it feels to be overlooked and counted out before you even start. Youth, poor, people of color - often know what it feels like not to be invited to the table of decision. Okra does too.

A lot of people discriminate against okra based on its texture (Slimy insides... okay yea that sounds a bit gross). But Okra taste is amazing!! 
THREE REASONS WHY YOU SHOULD OKRA
  1. A beautiful flower (Its looks good even while it grows)
  2. Its a dark green vegetable high in dietary fiber, will assist in losing weight and controlling cholesterol.
  3. Very easy to cook: stewed okra and tomatoes is super simple.
 I started eating okra for the first time about a year ago. This was my first dish. Growing up my mom spoke about fried okra. But we never had any, because she didn't like it. Then, one Sunday, Okra and tomatoes was on the Sunday dinner menu at my church. It was not as popular as collar greens or string beans... actually its probably still the last one but it made it to the table. I like to think we began serve more vegetables at my church partly, because my sister and I started asking for a greater variety.
