The proof of the pudding is in the eating- Miguel de Cervantes

 With Miguel de Cervantes quote, I could dive into a tirade about the insurrection at the capital on January 6th and what it reveals:

  • The fragility of people minds
  • The hypocritical double standard of American policing
  • A small view of consequences of allowing Trump to govern
Yes, the truth of the matter will reveal by time, why our stomachs soured watching the news unfold. Much like when we eat. Before our skin and our heart tells us it's bad for us, our stomach will let us know.

Unfortunately we can not decide to fast or choose what we want to experience from life's daily menu. The realities of the oppress becomes the dreads of the suppress. The interconnectedness and interdependence of the modern age, makes even polar opposites vulnerable to each other's actions.  All we can do is live, eat and pray for good digestion. But this post isn't about politics.

 I only want to share a Banana Pudding recipe. 😎


A sis from my church messaged me, to say that her nephew only wanted my baking for her his birthday. 🧐This was extremely random, like VERY random. Since, I haven't been baking for my temple since prior to COVID-19.  Even more so he specifically asked for banana pudding or a cake, (the former  I haven't made in years).

Celebrating a birthday, celebrating anything in this season of darkness is call for the extraordinary.🥳 I could have done a cake from scratch, but I didn't have time. Furthermore, I didn't tell her I only have made pudding using JELL-O box pudding. Instead,  I decided to look for a homemade recipe and I set a time to met up. 
My first search led me to celebrating sweets posts. I was so surprise about the simplicity of the recipe, I wanted to compare it with another. So, I consulted Betty Crocker. Eventually, I combine both recipes to mis gustos. I also did NOT skimp and brought the real banana wafers. My godmother, often stress about the foods that you just can not buy generic brands. And vanilla wafers is a must buy name brand food. I don't know if I agree 100% but I wasn't about to mess up a homemade banana pudding. 

 The pudding came out perfect. If you try it with generic wafers let me know, how it taste. Better yet, prepare me a small bowl and let's meet up! Here is my recipe:

Easy Homemade Banana Pudding adapted from Betty Crocker:


Ingredients

1/4
cup sugar
2
tablespoons cornstarch
1/8
teaspoon salt
2
cups milk 
2
large egg yolks, slightly beaten
2
tablespoons  salted butter, softened 
2
teaspoons vanilla 

Plus  2-3 Bananas, Whip Cream, a box of Vanilla Waffers

** At cookies and bananas the day you will eat it. No one likes soggy bananas.

Steps:

    In 2-quart saucepan, mix sugar, cornstarch and salt. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.

    In a separate bowl gently mix egg yolks. Then gradually stir at least half of the hot mixture into egg yolks, then stir back into hot mixture in saucepan. Boil and stir 1 minute; remove from heat. Stir in butter and vanilla.
Pour pudding into medium size bowl. Cover and refrigerate about 1 hour or until chilled. Store covered in refrigerator.     

4  Slice two bananas in slanted 1-inch discs. Layer small dessert cups with vanilla wafers and bananas. 
        *If vanilla pudding comes out to thick, blend pudding with 1/8 cup milk or whip cream.

5  Then pour vanilla pudding over cookie and bananas. Add more bananas and a final layer of cookies.
