healthy portions: fulling foods

This was posted at my job, I must say, it looks as if it would not only fill me but that exact meal has filled me over and over again. One question, I often consider is How are different metabolisms, dietary needs -cultures even factored in when the governing bodies whether Hospitals, USDA, FDA etc.. creates these posters? This one is obviously geared to an Hispanic / Caribbean audience . The plate is filled with yucca, stewed beef, broccoli and cauliflower with an avocado on the side.

It warmed my belly to see a plate designed for my people. Seeing this plate makes eating "healthy" more normal. I was delighted to incorporate this my plate poster, my first response was “oh, I know people eat that.” Nonetheless, the idea of having a neatly divided plate does not reflect many "color-full" dishes. When folks seek to divide their meal this way it takes away from how they eat naturally. During my nutrition classes I enjoy highlighting all the ways people of color eat vegetables. I want to empower folks to see that they do consume many vegetables, rely on vegetables to season their dishes and that their traditional foods are nutritious.
