Sweet Potato and Kale Hash
Cut sweet potato into 1 inch diced pieces. Set aside. Remove kale stems. Chop kale leaves, place them in a large saucepan with 1 cup of cold water and a pinch of salt. Bring to a boil. Reduce heat to low and cook until the leaves are tender, about 5 minutes. Drain the kale and run cold water over them to stop them from cooking. Set aside. Heat the olive oil in frying pan over medium-high heat. Add garlic, onion and herbs. Cook until the garlic and onions soften. Add the diced sweet potato. Saute until it is heated through. Add the chopped kale to sweet potato mixture. Mix and cook for 5 minutes. Stir in the lime juice, sprinkle with remaining herbs and cook for a minute more to blend.

- 1 Onion, chopped
- 2 Tbsp. thyme or Basil, finely chopped
- 2 Tbsp. Olive Oil
- 1 Lime, squeezed
- Salt and Pepper to taste
- (1 garlic clove, cayenne pepper)
