Veggies on the table
Recently, as apart of my job description I began to engage youth around eating more vegetables. This is different from persuading/pressing youth to eat veggies at my church. At church, while serving Sunday dinners I bribe or coerce 8 years old to select cabbage or string beans. At mid-week cooking demonstrations I would sneakily add the green stuff: think homemade pizza sauce (peppers, carrots, garlic, onions, celery all finely diced). Later on I would ask yum or yuck, then I ask them to guess how many vegetables I used.. Disbelieving, the youth would ask me which vegetables and where did I added them.
At my job, as part of the Veggication program youth educate and cook for their peers. The kids selected a special vegetable and discuss its benefits right before they do a cooking demo.

Its still too early, to say which method works better, however I do know for kids who instead that "if they eat onions they will cry" or that "they are allergic to apples" making the dish beforehand and disguising the vegetables avoids the battle of "just try it".
