Veggie Spotlight: Beets
My favorite color is magenta this veggie spotlight is Beets. Beets are scientifically related to swiss chard. One nutritionally fact about beets is that it is a heart friendly food; helping to lower high cholesterol. Another is that it is high in Iron and when pair with food high in Vitamin C it is the optimal absorption.
As the summer continues: here is a quick and breezy way to add beets to your diet. Make a green salad and add freshly sliced beets. This is a sample recipe which you should tweak to your liking.
Boil 4 medium beets until soft. Cube the beet into 3 inches.
(Optional:Boil 2 large carrots) Slice into half moons
Second dice 5 small or 2 large tomatoes.
Roughly chop up a large head of romaine lettuce or a bunch of swiss chard
Dice two cucumbers
Enjoy with your favorite dressing
Tip: When buying beets choose the smaller beets with no cracks in the skin. These are more delicious and nutritious. The fresh beets and the carrots definitely make this salad a little sweet.
